Recipe Spotlight – High Protein Pancakes – Brian Kiekhaefer

Cook time: 15 min
- 1/2 cup oatmeal, dry
- 1/2 cup cottage cheese
- 3 eggs
- In a bullet or blender, mix all ingredients until smooth.
- Use nonstick spray or butter in pan, medium heat.
Alternatives – add cinnamon to taste, vanilla to taste, milk to thin batter, increase oatmeal to thicken.
